Le mas du Salagou is a small property of 4.3 Ha. A very stony land north of Montpellier at the foot of Larzac and Lake Salagou. 50% of the estate has been cultivated in red and white carignan for 70 years. 100% Carignan on the 3 colours.

This 100% Carignan organic wine reveals delicate aromas of wild berries and flint on a quality toasted background. The velvety palate confirms the fruit, minerality and toasted notes. This beautifully mature wine is the product of careful work and respect for a unique terroir.

Vinificated and is manually harvested in small boxes, direct pressing and long fermentation at low temperatures. Tasting on the palate it is a supple and tender wine with a beautiful freshness. This rose will go perfectly with seasonal dishes or aperitif with friends.

Harvested by hand in boxes Fermentation takes place in thermo-regulated stainless-steel vats. The wine remains on fine lees until February in order to preserve all the aromatic expression and finesse of this fragile and delicate wine. TASTING: Pale colour with green highlights. The nose has notes of fennel and anise. The mouth is fresh and harmonious. Time gives it notes of pine resin. The vineyard is spread across the communes of Aniane and Saint-Jean-de-Fos. A real plot selection was carried out for their first vintage. The Mourvèdre, part of the Syrah and the Carignan come from the slopes of the “Brousses” of Aniane. All of the Grenache and part of the Carignan are harvested at the place called “Le Saut” in the commune of Saint-Jean-de-Fos. And finally, most of the Syrah comes from the place called “Puechauma” in Aniane. Their vine stocks, cut into cordon de Royat or goblet shapes for their old Carignan, grow on south-east facing hillsides on clay-limestone soil. They encounter greeters and yellow marls.
